This Yahiko Western Petty is made from the very popular stainless steel called VG-10. VG-10 is a cutlery-grade stainless steel produced in Japan. The name stands for V Gold 10, or sometimes V-Kin-10 (kin means "gold" in Japanese). It is a stainless steel with a high carbon content containing 1% carbon, 15% chromium, 1% molybdenum, 0.2% vanadium, 1.5% cobalt, and 0.5% manganese. All of these relatively small amounts of other metals give the VG-10 steel its most important properties, such as its ability to hold an edge coupled with great durability. It is one reason why the VG-10 label has been so popular with some of the biggest knife makers in Japan. The knife featured here is stamped from a VG-10 stainless steel san-mai sandwich, which has been heat treated to 60 Rockwell.
The petty featured here is on the small side for the genre, almost a paring knife in size and feel. The fit and finish of the blade is of a really high standard, especially taking into account the very reasonable price. This is a perfect knife for peeling the skin off of produce and for delicate and fine cutting work on garnishes. It would also be a great choice for fine filleting work and silver skin removal on small cuts of meat.
