The Yahiko VG-10 Gyuto 210mm is made from the ubiquitous stainless steel known as VG-10, hands down the most popular alloy used in stainless knives coming out of Japan. VG-10 is a high carbon content steel that exhibits great edge taking and holding characteristics as well as being very easy to maintain. The name is derived from the Japanese V-Kin 10 branding. Kin is Gold in Japanese and thus you get VG-10. The alloy is heat treated to 60 Rockwell.

The blade is designed for all-around versatility in cutting and chopping. The shorter length allows for use on small boards and in restricted spaces. It is also a very comfortable knife to handle and makes a great choice for chefs new to Japanese knives or who are looking to refine their cutting skills.

It is not a tall blade so those with smaller hands will find it a good fit in terms of light weight and ease of use. The shorter dimensions also make it able to deal with both larger ingredients as well as small items and intricate cutting and slicing techniques.

    This is my first attempt at mounting a handle on a Japanese knife blade. I used a stainless steel rod in an offset hole, and epoxy to secure the blade to a stabilized Hawaiian Mango handle with a wavy grain. I've only used the knife once to cut a tomato which it did very well. Tonight I'll give it a workout cutting up everything to make Borscht. I like the shape of this knife better than my old Shun chef knife.

    Bought this for my kids out of town. I handled it in redheart with a walnut ferrule. My daughter and son-in-law love it. It's their first jpn knife. You can get a very decent edge on it and ery easy to maintain. Especially for newbies. It has been used and liked by their friends. I may be buying more for Christmas presents for them. And no need to even mention the shipping and ACTUAL customer service. 5 stars! This is the only place I buy new knives from.
