The Tsubaki Blue #2 Bunka 210mm is the longest knife in the trio of Bunka knives made by young blacksmith, Mr. Miyazaki. Working out of his small shop in Nagasaki he hammer forges a very small line of specialized blades using Blue #2 carbon steel. This is undoubtedly one of the most popular carbon steels used for kitchen knives with a list of enviable characteristics including great edge retention and durability. It is the same basic steel as White #2 but with added chromium and tungsten.

While it might look like a regular bunka, these are more correctly named Hakata bocho knives. This is a regional variation of a bunka bocho which features a triangular pointed tip and a curved spine. The blade height of this particular example is a tallish 52mm which allows for increased board clearance. The blade edge is quite flat, favoring push-style cutting techniques. Even though it is a fairly long knife, the pointed tanto-style tip adds the ability to process smaller foods and make intricate cuts in small items and garnishes.

The knife is finished with a really attractive fire-forged kurouchi cladding and is coupled to a traditional ho wood oval handle featuring some fun looking fire branded motifs.

    Very nice handle, ligth, extremely sharp out of the box, thin and high blade.As I like. It's a pleasure to work with and if i take one of my knives to go travel this knife will be a good choice. Efficient on meat and vegetables.But you must be carefull : the edge and the pointed tip are very breakable. After one day use i saw little chips on the edge. I re-sharpen it and know it's ok. No more problems.But i broke the pointed tip, one mm is gone. I was very carefull and i am experienced with many japanese knives but i must re-sharpen the tip to.But no regrets, very happy to use this original and rustic knife.Sorry for my laborious english...i am french...no body is perfect !
