I first bought a yoshihiro sujihiki, then a seiki mago roku deba, then this nakiri. Trust me, the first chop on to the vegetable is so great that I can never forgot the feeling. Since all dishes do need a certain amount of vegetable, going for this choice will never be wrong.About tojiro, this is just a new knife to me, but the overall balance is ok, it' center of mass is well designed for nature up and down motion, you will just need a tiny force to push forward while chopping down. So, this makes control much easier. (applying constant force to one same direction makes it easier to do precision control compare to no force free fall).
