Shigeki Tanaka is a master at creating blades using the age old techniques passed down by Japanese blade makers for centuries. He is the son of master blacksmith Kazuyuki Tanaka. After his father's passing, Shigeki started making a name for himself and furthering the reputation of the family business. He is now a highly esteemed knife maker. His blades generally feature wonderful grinds which are nicely convexed and very thin behind the edge.
The 150mm petty is a knife most people consider to be the ideal size for a general utility blade. The mini gyuto shape and blade height make the 150mm petty an outstanding choice for all-around use in the kitchen. It pairs nicely with a gyuto, and works fantastically well on the board for fine work, such as fast mincing of garlic and shallots. It does a great job with garnishes, too.
VG-10 steel is good quality stainless steel, specifically designed for kitchen knives. The edge is then covered with a softer stainless steel to add strength and help with shock resistance. The cladding is given a very nice pear skin (nashiji) finish.
The simple but sturdy handle is a western style bolsterless design made from pakka wood and secured with two stainless rivets.
