The mystique surrounding the blade shape commonly referred to as KS is one of the hottest topics in the world of kitchen knives. The shape probably should be called a French profile after the classic chef knife made famous by Sabatier.

The Shibata Kashima R-2 Gyuto is the result of us asking one of our favorite bladesmiths, Takayuki Shibata, to offer his interpretation for this much-imitated design. He decided on a hammer forged, san-mai blade made with R-2 stainless steel. The inner core is clad with soft stainless steel for easy care and added strength. The R-2 cutting edge will sharpen to an incredibly refined edge and, due to its exceptional edge retention, the knife will hold an edge for longer periods on the cutting board.

We are now offering these wonderful blades fitted with a gorgeous custom curly maple, stabilized, octagonal handle.

    Very impressed by the performance of this knife on everything I've thrown at it so far. Effortlessly glides through veggies from peppers to carrots. The tip is so thin it flies through anything. Very laser-like in appearance with performance to match, but also excels at workhorse style prep. Potentially fragile due to the thinness, but I really can't find anything negative to speak of. This checks quite a few boxes and really fills the bill as a do-it-all knife. Thanks for offering it!

    5-Stars for CKTG, There service is second to nobody!They DO take care of their customers. Great products and fast delivery. As for the knife: R-2 steel is my favorite non-carbon steel for kitchen knives. It is much like ZDP-189 but cheaper and easier to sharpen, or AEB-L (also a great steel) but gets sharper and keeps the edge longer. This steel does not rust like a carbon steel, so less care is needed, but still should be washed and dried after use. My only reason it is not a 5-star knife to me is the handle. I love the length (longer than most custom handles by about 1/2 inch) but the width, which is to thick for my liking. I have a normal size (6") hand and my wife and nieces have smaller hands, this handle is thick enough for a 10"+ hand. Blade is a 5-star, as is fit and finish, but due to the thickness of the handle I can only go 4-stars. Hope this helps you understanding what you buying.
