As for the knife: R-2 steel is my favorite non-carbon steel for kitchen knives. It is much like ZDP-189 but cheaper and easier to sharpen, or AEB-L (also a great steel) but gets sharper and keeps the edge longer. This steel does not rust like a carbon steel, so less care is needed, but still should be washed and dried after use. My only reason it is not a 5-star knife to me is the handle. I love the length (longer than most custom handles by about 1/2 inch) but the width, which is to thick for my liking. I have a normal size (6") hand and my wife and nieces have smaller hands, this handle is thick enough for a 10"+ hand. Blade is a 5-star, as is fit and finish, but due to the thickness of the handle I can only go 4-stars. Hope this helps you understanding what you buying.
