This Red Rock Tools chef knife is fashioned from 52100 tool steel. AISI 52100 is a high carbon tool steel containing low quantities of manganese and chromium to improve hardening. It is used extensively in the manufacturing of ball bearings and in applications where corrosion is less of an issue. 52100 tool steel is considered an ideal, affordable alloy offering a very fine grain with superior edge retention. The knife is a mono steel construction using a stock removal method.

ABS Journeyman Bladesmith Steve Grosvenor has built a very interesting and great looking tall gyuto. It measures in at an impressive 54mm at the heel with a shorter than normal edge length of 205mm. The edge profile is a very gentle curve starting almost at the heel. Rock cutters are going to love this profile. The knife is a true laser which is ground super thin all over.

    I can't say enough good things about this knife. Even though it's carbon steel, it's not very reactive and I haven't had any trouble with rust even though my girlfriend washed it and let it drip dry once. The blade is thin but strong and predictably flexible. The blade retains its edge incredibly well and flies through veggies. The handle is the most ergonomic I've encountered and fits my medium sized hand perfectly whether I'm chef-pinching the blade or grabbing the handle with a fish. Did I mention this knife is beautiful and will always draw comments from guests?
