MitchI can’t say enough good things about this knife. Even though it’s carbon steel, it’s not very reactive and I haven’t had any trouble with rust even though my girlfriend washed it and let it drip dry once. The blade is thin but strong and predictably flexible. The blade retains its edge incredibly well and flies through veggies. The handle is the most ergonomic I’ve encountered and fits my medium sized hand perfectly whether I’m chef-pinching the blade or grabbing the handle with a fish. Did I mention this knife is beautiful and will always draw comments from guests?Was this rating helpful to you?
