This Unagi knife is made of white #2 steel and is used for processing eel primarily but also could be used to bone poultry or even be used as a general purpose utility knife. This one is done in the Tokyo Style shape for Eel Cutting and it has a very nice finish sharp edge on it.

The best thing I like about this knife is the thickness of the blade and it works best on boning chicken along with other tasks that require some weight . You can't beat Japanese steel with the edges that can be sharpened so easy, this is part of my many knifes from japan.

Good knife sharp out of the box. The shipping was fast and the product is of good quality. You get what you paid for and it is a good knife for its price. Would have liked it to be sharper and hold its edge a little better

It's sharp out of the box, but not enough to shave hair. Also the finish on the blade is not the best. So for that, I'm giving it 4 stars. I haven't used it on eel, but I used it to butcher pheasant, and trim some beef. It sliced through them like butter. I look forward to finding different uses for it. If you want a fun little knife, pick this up.
