Aogami Super is steel prized for its wear resistance, ease of sharpening, and ability to achieve exceptional levels of hardness and, by extension, very refined and acute edges. This steel is found at the core of the Moritaka Supreme 150mm nakiri and is heat treated to achieve a Rockwell Hardness rating of 64-65 which we find to be an excellent hardness for AS. The core steel is clad in soft iron and rendered with a kurouchi finish which provides a beautiful rustic aesthetic to the blade.
