When undertaking the most delicate of tasks, as petty knives are called upon to do, keen, high-performance edges are paramount. This 135mm petty from the Masakage Mizu line offers the keenest of edges with an Aogami #2 carbon steel edge hardened to 62-64 HRC. The cladding is soft iron giving the knife a fully reactive construction. Care should be taken to keep the knife clean and dry between uses to eliminate the risk of corrosion. A deep blue/black kurouchi finish resembles deep, cold water, hence Mizu, which means water in Japanese. Katushige Anryu, a master blacksmith with over 50 years of experience handcrafts all the knives of the Mizu line. The handle is an ambidextrous, oval shape made of cherry wood with a marbled resin ferrule.

    I bought this petty to pair with my 250mm gyuto. Sometimes you just need a smaller blade. This petty fills the bill perfectly. Well made, well balanced, this little workhorse is fast becoming an indispensable tool in my home kitchen.
