We love finding out-of-the-ordinary knife makers to add to our store offerings. So when we heard about a blacksmith who takes his blades from a piece of steel to the finished and sharpened article we just had to investigate further. It turns out that Mr. Kuwabara does indeed take on every stage of blade making (not the handle), even hand sharpening the finished edge on natural stones.

The gyuto featured here is made from White #2 steel, aka Shirogami 2. The steel is protected with a soft iron cladding that retains its blacksmith carbon finish for that cool rustic look and to add protection to the blade. It will still need to be carefully dried between uses.

While 210mm is on the shorter side of the scale for gyutos, many people prefer the compact dimensions and lighter weight of this size blade. It is still large enough for processing almost all types of ingredients, yet compact enough for more delicate tasks and smaller work areas. The blade profile is quite flat for almost half the edge length resulting in tool a push cutter would really enjoy.

-Great cutting feel
-Harder than average white steel
-Even grind, slightly convex
-Best food release I've experienced
-Extremely sharp out of the box
-Rounded choil and tight handle installation
-Very Rustic (a plus for me)
