We are very pleased to be able to offer these fine knives made by one of Japanís leading blacksmiths. They have been created exclusively for CKTG.

The Kohetsu HAP40 Wa Gyuto 240mm is the larger of the gyuto styles. It weighs in at 4.8 ounces. It has a nice thin tip with a little distal taper towards the point. It has a nice nimble feeling to it and comes with a super sharp edge right out of the box.

HAP40 is fine-grained enough to sharpen very well and rates 65-66 on the Rockwell Hardness Test (HRC) even harder than the traditional carbon steels used for knives. Contrary to other HSS steels, it can be relatively easily sharpened on normal waterstones, if not quite as easily as traditional steels. Knives from this steel keep their sharpness 3 to 5 times longer than traditional knives. HAP40 is extremely tough, and so not as likely to chip along the edge as the steel used in traditional knives.

Please note, the knife sharpener intentionally thins the edges of these knives to make them perform better, especially on the tip area. Often times you will see a hazy/cloudy scratch pattern as a result. This is not a defect.

    It's not a bad knife but it needed some effort to get it to a working state. There was a bend (2mm) about 1 cm from the tip. The sharpener clearly saw this as you can see the hazy polish done to thin the tip was on one side only. I got most of the bend out with a mallet but it's not perfect straight and I don't have the sack to try and bend it so close to the thin tip. The worst part for me was the grind near the heel. There was about a 2.5" section that was ground like a recurve. I didn't notice until I used it and I wasn't finishing my cuts (slinky food). It took me about 20 mins to grind it out on whetstones and it seems pretty good now. There were also some funky grind marks near the heel and the handle was fuzzy and not finished great. Now after this initial work the knife works great. It took a screaming sharp edge and slips through produce with little effort. It feels like a smaller knife because of how shallow (height) the blade is and it is very light weight and nimble. I wish it was bigger as it feels sized somewhere between a 210 and 240 (actually 232 mm). While I'm ok with the knife while using it, I'm disappointed in the fit and finish and I expect much better in this price range. Hopefully this was just lemon (most likely) and not representative of the entire line.
