Konosuke Fujiyama
Sujihiki. What words can you use to describe a legend? The Fujiyama series of knives for Konosuke are regarded as legends and rightfully so.
Originally the Fujiyama series was made by a single blacksmith-and-sharpener pairing. But a few years ago a new sharpener was bought into the fold and thus the FM line was born. For as long as they have been made, these knives have received universal praise for their extraordinary designs, grinds, and fit and finish. Like all the Fujiyama blades, FM knives are quite hard to come by, and as a result, high on the list of collectors and enthusiasts worldwide.
The core steel of this fine blade is the ever-popular Hitachi Blue #2 high carbon alloy. It is clad with a softer iron to protect the core and make sharpening easier. The cladding is applied in the San Mai style. The FM sharpener then applies a stunning finish to the blade face that emphasizes the cladding line and enhances the overall look of the knife.
The FM knives feature a slightly different design profile, including a much taller blade and thicker spine. These now have more of the feel of the older Fujiyamas. It also bears some lovely hand engraved kanji elements made by master engraver Mr. Kawamura.
