This petty, which could equally be described as a 210mm sujihiki, is an excellent knife for slicing work when board space is at a premium, or work that requires less edge surface, like filleting fish and smaller veggie prep. Overall, this is quite a versatile and popular pattern in pro kitchens.

Moritaka has been handcrafting blades since the turn of the 13th century and the tradition implicit in the companyís long history is tangible in the Supreme line of kitchen cutlery. Aogami Super is expertly treated to 64-65 HRC and is found at the core of these knives. A kurouchi finish is applied to softer iron cladding which provides a wonderful rustic/traditional aesthetic as well as helps the blade resist corrosion. That said, due care should always be taken with carbon steel blades to assure they are wiped during use and kept dry. Fit and finish is excellent and the 50/50 grind and edges on these knives make them ideal for left- or right-handed users. The knifemaker employs a compound/convex grind which aids in food separation and complements the incredibly potent AS steel edge. These knives are not only a piece of knife making history, but are a tremendous value. Please note as of May 15th, 2015 these knives now have a ho wood octagonal handle with buffalo horn ferrule.
