Anryu Knives is among the most popular brands we carry at CKTG. The company produces several different lines of blades encompassing various steels and techniques. The knife featured here is part of the Kurouchi Damascus range. They are made from the ever-popular White Paper #2 high carbon steel as the core. A soft iron, multi-layer cladding is added using a hammer forged san-mai technique. Anryu-san forges these blades to a hardness of 61-62 HRC.

The hand-hammered blade is beautifully finished with a kurouchi top section which leads to the multi-layer damascus cladding and then to the beautifully polished edge.

This is a really small knife at just 75mm in blade length, but the small size makes for a very purposeful tool. This is a dream knife for chefs who specialize in creating finely crafted garnishes using intricate slicing methods. It is also very adept at getting into the small places other blades could not begin to reach. The super thin edge will also take on the softest ingredients with aplomb.

A really well finished handle made from rosewood and black pakka wood is made with an oval profile for ease of handling and a well-balanced feel. This tiny knife could be a big addition to your block or roll.

    I bought a second one of these for a friend who recently finished culinary school. He really liked mine and is excited to use his. Not too reactive, a very effective shape, and takes a great edge.His handle is a few mm longer than mine which I think I like.
