Mr. Katsushige Anryu has over 50 years of experience as a blacksmith on display with this 270mm gyuto from his Hammered lineup. The knife is constructed of a Hitachi Aogami #2 carbon steel core hardened to 63 HRC wrapped in stainless steel for ease of maintenance. The core steel will take an extremely keen edge with ease and hold that edge for a long time. Mr. Anryu's Hammered line has built a reputation among Japanese knife enthusiasts for their high performance grinds and rustic yet refined aesthetics. Handle is made with rosewood and a black pakka wood ferrule. The edge is evenly ground so the knife will work for right and left handed users equally well.

    Absolutely satisfied. Beautiful, functional and well-made knife. The aogami edge is pretty easy to care for if you know how to deal with reactive steel, and the hammered stainless is a no-brainer. Great value, I wish I could find all the knives I use in a similar fit and finish.

    I thought this knife was going to weigh a ton, but it's light as a feather and extremely sturdy and tough.Plus for us non-professional chefs, it's just fun to use a knife this big! I will definitely be watching for more Anryu knives in the future.
