The Sharpal 121N pairs the same full-tang, monocrystalline diamond construction as the 120N with a finer grit pairing: 325 grit (45 micron) on one face for edge setting, 1200 grit (9 micron) on the other for honing and fine edge refinement. Where the 120N is built for heavier edge repair, the 121N is tuned for general sharpening and maintenance on an edge that is already close to true.
A 20-degree angle guide is built into both edges of the plate, so the angle reference is available no matter which grit face is in use. The plate is rated for dry use, and Sharpal notes that testing shows minimal performance difference between dry and oil-assisted sharpening on this abrasive, so oil is optional rather than required. Full-tang construction keeps the diamond surface backed by solid steel, with no flex under pressure.
Use and Care Instructions: Use dry. Water is not required and can cause the fine iron particles that build up on the plate to rust if left wet. Wipe the plate clean with a dry cloth after use. Dark residue on the surface is embedded metal filings from sharpening, not diamond wear, and does not affect performance. It can be removed with an eraser, or with a mild cleaner such as Bar Keepers Friend for tougher buildup, followed by a full air dry.
