Running a perfect length for all round kitchen duties, the Murata Buho Gyuto is a fine kitchen tool built to high standards while being offered at a very affordable price. Murata-san has worked his magic with Blue paper #1 carbon steel forging a blade that is light, nimble and well balanced. The easy to sharpen blade takes on a screaming edge which is long lasting and very tough. You will breeze through any prep work with a smile. At the same time your maintenance will be minimized with the help of the great looking Kurouchi finish. Add to this a comfortable hexagonal Ho wood Wa handle and you have a great knife that will work for you in almost any instance. We like these knives a lot and trust you will too!

*Please note, the tips on these knives are ground off at an angle. This is intentional. See the second photo to see what it looks like.

    I'm writing this review after two months of using of this knive. I've sharpen it 3 times By now with everyday use. It's my line knive and I use it for everything. From braking down salmons to Cutting cases of carrots. In general is a very good knive for all purposes. I give it a low grading cozz it needs a lot of care, and if you are busy as a line cook it's difficult. It needs cleaning after every cut cozz of the reacting steel, to don't get rusty, the handle is very slippery, it gets sharp very difficult, at least 20 minutes on the stone and it has very bad balance. When they glue the handle with the steel they glue it a bit curved, not in straight line. For all purpose knive and for these money is good, but it's better to spend few more dollars and buy a good one than to buy one cheap hopping to be good like me. I took my lesson.

    Great knife, handles very well. I will say the handle can get a bit slippery if you are using you r knife hand to also manipulate product. however it is a great blade and was very sharp out of box and if you choke your grip up onto the end of a blade like most professionals and not hold it like an axe you shouldn't have any issue and this will be a great blade to start your collection.

    Very impressed with this product. As another reviewer mentioned, it arrived shaving-sharp out of the box. Noticeably lighter than a western-handled blade of comparable size, with a balance point and semi-rounded choil that matches well with my pinch grip. Finally, the single-piece handle is far better quality than what you might expect for a Blue #1 knife at this price. I can see how it might be slippery when wet, though, which could be a concern for users in commercial settings.

    Definitely a great knife for a great price. This is my first Japanese knife and it's been a great introduction. It handles well and is quite sharp. I've had this for about over a month now and the only complaint i have(hence the 4star rating) is that it doesn't seem to keep an edge for too long. Although a few runs through a ceramic steel does the trick. Aside from the extra maintenance(due rusting,) this knife is great for the price I paid.

    This is hands-down the most cost effective non-Western handled gyuto I have ever come across! The edge is shaving sharp out of the box, the kuroichi finish is quite attractive, and the handles are comfortable with a great grip. The balance point is also perfect for a pinch grip.
