Takeo Murata is a blacksmith from Kochi Japan. His knives have a good reputation for quality and he uses top shelf aogami blue paper steel for his knives (blue #1 steel) with HRC of 61-63. These knives have a nice kurouchi finish with very nice wa handles. These knives are sold under the brand name Buho.

    This is hands-down the most cost effective non-Western handled gyuto I have ever come across! The edge is shaving sharp out of the box,the kuroichi finish is quite attractive,and the handles are comfortable with a great grip. The balance point is also perfect for a pinch grip.

    Definitely a great knife for a great price. This is my first Japanese knife and it’s been a great introduction. It handles well and is quite sharp. I’ve had this for about over a month now and the only complaint i have(hence the 4star rating) is that it doesn’t seem to keep an edge for too long. Although a few runs through a ceramic steel does the trick. Aside from the extra maintenance(due rusting,) this knife is great for the price I paid.

    Very impressed with this product. As another reviewer mentioned,it arrived shaving-sharp out of the box. Noticeably lighter than a western-handled blade of comparable size,with a balance point and semi-rounded choil that matches well with my pinch grip. Finally,the single-piece handle is far better quality than what you might expect for a Blue #1 knife at this price. I can see how it might be slippery when wet,though,which could be a concern for users in commercial settings.
