Kanehide Bessaku is a specialty brand that we found while visiting Seki City this spring and they produce many knives aimed at butchering, filleting and other meat processing workers in Japan, and almost all are single edged. They offer two types of handle choices, one is made of wood and the other is of elastomer with anti-bacteria for sanitary purpose. And many styles are designed to fit each specific cutting task. The knives are made with a very popular semi stainless steel which is the same steel used in the Kikuichi TKC line on our site. It takes a great edge, sharpens easily and holds that edge well. It will spot and stain a little since there is about half the chromium of full stainless knives.
