Kanehide Bessaku

Kanehide Bessaku is a specialty brand that we found while visiting Seki City this spring and they produce many knives aimed at butchering, filleting and other meat processing workers in Japan, and almost all are single edged. They offer two types of handle choices, one is made of wood and the other is of elastomer with anti-bacteria for sanitary purpose. And many styles are designed to fit each specific cutting task. The knives are made with molybdenum vanadium stainless steel with HRC of 58-59.
