Kanehide Bessaku is a specialty brand that we found while visiting Seki City this spring. They produce many knives for butchering, filleting, and other meat processing; almost all are single-edged. They offer two types of handle choices: wood or elastomer, which features anti-bacterial properties for sanitary purposes. Many of their styles are designed to fit each specific cutting task. The knives are made with a very popular semi stainless steel which is the same steel used in the Kikuichi TKC line on our site. It sharpens easily, takes a great edge, and holds that edge well. It will spot and stain a little since there is about half the chromium of full stainless knives.
