- verified customerI've had this knife about two months. Holds an edge like nobody's business, and it is really easy to maintain. Out of the box it's sharp enough to shave hairs, and after a couple of days working on the line, a few passes at a 3000-4000 grit stone will get you back to where you wanted to be.
In my professional opinion, this is not a commercial kitchen knife, nor should it be considered for an introduction into carbon steel. The price point is there, however, it's understated from many sources how delicate a kurouchi finish actually is. Beyond that, the face of the blade that is still Aogami Super is much more reactive than I anticipated and I haven't even used this knife on anything acidic.
That being said, the performance you can receive out of this knife is probably almost unmatched for the price. It is truly a remarkable step up.
