Hideo Kitaoka makes Traditional Japanese knives and has been working at his craft for 30 years. He works at Takefu Village knife co-operative along with many other smiths and does excellent work.
The knives in this section are made with a blue #2 steel and have excellent edges that will last a long time. HRC on these knives is 63/64 and they're top quality sushi knives that will give long service to sushi line cooks.
