The yanagiba (or just yanagi for short) is specifically designed to make sashimi cuts easier. It is also adept at general slicing duties. These knives are made from high quality, high-carbon steel, in this case Aogami Blue #2. In order to retain their edge and add strength to the blade, they are constructed with a layer of softer iron on the outside of the core. Aogami Blue #2 is a high carbon alloy with added chromium and tungsten. These elements impart a toughness to the steel and aid in edge retention and overall durability. The alloy is hardened to 63-64 HRC. Of course the blade is going to be reactive so please make sure to thoroughly dry it after every use.

The 300mm Yanagi featured here is a perfect size for users with lots of board space looking for the best slicing experience achievable using one single pull stroke. This cutting style is essential in sushi preparation as it ensures that the delicate flesh of the fish is left completely unharmed by the bruising forces of a blunt blade or sawing action.

This lovely blade is accompanied by a traditional Japanese D-shaped Ho wood handle. Once you go Yanagiba, youíll never go back.

This single bevel knife is made specifically for left handed users. We also have a right handed version available.

    Over all this is a wonderful yanagiba. out of the box it is really sharp but the blade road is on the rough side but a trip to the stones will fix that up. Minimal high and low spots, the handle is ok nothing special. Over all a really nice knife and the great shipping and service from Mark.
