Bunkas are essentially nakiris with a sword tip added for some additional versatility. This particular offering from Takeda sports a 50/50 compound grind with an exceptionally tall and thin edge bevel. In this blade, Aogami Super steel is treated to achieve a 62 rating on the Rockwell Hardness scale which allows the knife to retain its ductility, while still being capable of superior edge taking and holding characteristics. The carbon core of the knife is laminated with kurouchi finished stainless steel to enhance corrosion resistance and ease of maintenance. While smoother and more uniform than the kurouchi finish on Takedaís Classic line, the aesthetic integrity of Takedaís Stainless Clad line remains intact. Takedaís knives have developed somewhat of a cult following amongst knife enthusiasts and are viewed by many as the gold standard for tall Japanese performance cutlery.

This knife has completely replaced my blue #2 Santoku and mostly replaced my beautiful Damascus VG10 nakiri. Easy to sharpen and gets super sharp. Like using a giant straight razor to prepare vegetables. I reach for it more than any other knife and I have a rack full of great cutlery. Kind of expensive, but I've spent more on things I used and enjoyed less.

I want to sell every knife I have and replace them with Takeda's now. When I first received this knife and felt how light it was, I was almost disappointed. But as soon as I started chopping through an onion at the speed of light, my eyes were opened and the blade gods smiled upon me.
