Chef Knives to Go has developed the Kohetsu line of knives as a high quality, high value option for both epicurean home cooks and hardworking culinary professionals. This Kohetsu SLD 165mm nakiri features SLD semi-stainless tool steel hardened to 61-62 HRC at the edge. SLD is well regarded for excellent edge taking and edge retention. While not technically considered a stainless steel, SLD is extremely stain resistant and the cladding over the core steel is stainless so discoloration during normal use is practically nonexistent. Knife has a unique and attractive lattice work aesthetic and a polished finish. The d-shaped handle is made of oak with a black plastic ferrule. Each one of these knives is uniquely handcrafted so some dimensional variation may occur.

    Excellent quality for the price point. I'll probably send it in to replace the handle, however, the blade is exceptional, it'll shaved arm hair OOTB. I've only had this piece for 2 weeks so I'm not sure how the edge will hold up. Overall I am extremely pleased with this Nakiri.

    I bought this knife for detail work on

    more Brunoise cuts.

    Out of the box i tried immediately on some
    onion and celery.

    glides through onion very easy and excellent
    sharpness from the SLD.

    Very nice lattice pattern on the blade.
    very thin grinds. handle needs some
    sanding near the wooden handle and plastic


    very good rocking motion.
    push cuts excellent.
    feels good in the hand.
    very light knife.

    highly recommend for the price.
