Katsushige Anryu is a blacksmith working in the storied knife making village of Takefu. Mr Anryu has amassed over 50 years of experience which is evident in this 240mm gyuto from his hammered line. As with other knives in the Anryu Hammed line, this knife is constructed of a Hitachi Aogami #2 carbon steel core, hardened to approximately 62 HRC, and clad in stainless steel for ease of maintenance. The core steel in this gyuto is renowned for taking an outstanding edge easily and holding that edge well. This knife has developed a reputation among Japanese knife enthusiasts for its high performance grind and unique aesthetic which balances the rustic and the elegant perfectly. A reminder, the carbon steel core of this knife will discolor with normal use and rust with abuse. Additionally, like many high quality, hand made knives, these knives will vary from one example to the next.
