Katsushige Anryu is a blacksmith working in the storied knife making village of Takefu. Mr. Anryu has amassed over 50 years of experience which is evident in this 240mm gyuto from his hammered line. As with other knives in the Anryu Hammed line, this knife is constructed of a Hitachi Aogami #2 carbon steel core, hardened to approximately 62 HRC, and clad in stainless steel for ease of maintenance. The core steel in this gyuto is renowned for taking an outstanding edge easily and holding that edge well. This knife has developed a reputation among Japanese knife enthusiasts for its high performance grind and unique aesthetic which balances the rustic and the elegant perfectly.
A reminder, the carbon steel core of this knife will discolor with normal use and rust with abuse. Additionally, like many high quality, hand made knives, these knives will vary from one example to the next.

    This is my first purchase from CKTG after following a watching a few of their
    product reviews. I was not disappointed. It\'s a beautiful knife! The hammering
    is so very well done and as the review commented about it, I would say it
    is perfectly imperfect and reminds you that it is hand made by a person with
    over 50 years experience and not mass produced. The heel and the spine are
    finished expertly and has no rough edges that might catch. The grind on the
    blade is just amazingly crisp and out of the box was a pleasure to us. I just
    hope I can maintain this and do it justice. This wasn\'t my intended purchase
    but the customer service was very helpful and delivery swift which pursuaded
    me to give this website a go. I\'m very pleased with my purchase and would
    probably return for future purchases. I\'m probably glad they don\'t have a
    shop in London (UK) else my collection would grow very quickly.

    Excellent service by cktg,
    received fairly quick even via Chicago and dodgy Aus customs.

    the knife I got is not as perfectly finished and masakage sharp as the one in Shaun's video.
    it has some choil and spine rough bits I suppose it looks identical to Steve G.s review video knife.
    Beautiful knife however - and am very happy with the handle fit and finish and the service.

    This is a first class knife! I spent a long time researching different chef knives and i wanted a good workhorse knife, and I found it. Being stainless clad makes it easy to keep clean without worrying about stains. It gets sharp, stays sharp, and responds well to a steel.
    I highly recommend this knife and CKTG!
