What works best for me is to hold the Idahone horizontally, with the tip on the edge of a kitchen countertop. I then hone the blade almost as I would on a sharpening stone.
I would rate the Idahone fine at 2K Japanese water stone grit level, maybe even finer - it puts a nice toothy edge on all the steels I've tried thus far.
Get the eraser as well - it's inexpensive and it just works.
