Sujihiki knives are like a westernized Yanagiba. Itís primary use is as a slicer of proteins. It features a long thin blade that, due to its reduced surface area, can glide through cooked or raw meats and fish without the food sticking to the blade. The slice can be completed with just one blade stroke so itís efficient and quick to use too. This Fujiwara Carbon Sujihiki measures just over 240mm along the blade. It is constructed of a high carbon steel. The grind is thin and the edge is asymmetrical. The total weight of the knife comes in at 5.4 ounces. So itís a lightweight considering its size. We must caution that the metal used in this mono-steel blade is very reactive. So you need to be careful with keeping it dry after use. The patina that will develop helps with this maintenance and corrosion resistance.

    Well worth the price. Very light knife. Sharpens easily and can get a razor edge. Did need sharpening out of the box. I forced a patina with a mustard vinegar mixture and it looks awesome.
