The FKH line from Fujiwara Kanefuse is a High Carbon series. These knives are more reactive so they require extra care to keep from oxidizing, but will form a great patina. These knives also take a steep edge and will hold it for an extended period. This series is equipped with black Pakka wood handles and the steel has a HRC rating of 60. They are an extraordinary value at this price point. The 240mm Sujihiki is a great slicer. It can handle roasted birds or meats of almost any size and makes slicing a breeze.
Well worth the price. Very light knife. Sharpens easily and can get a razor edge. Did need sharpening out of the box. I forced a patina with a mustard vinegar mixture and it looks awesome.

Great line knife. I can get it razor sharp with very little work. Makes slicing proteins during service a real joy. I have used all kinds of knives and highly would recommend this to others.
