Introductory Sale! New for 2017! One of our largest customer segments are line cooks and this knife is designed for their needs. The CKTG Line Knife Gyuto 210mm is a stainless gyuto that uses good quality 5Cr15MOV stainless steel with HRC of 59-60. The handle is made from G-10 which is nearly indestructible and this is an important benefit for pro cooks that use their knives 10 times more than home cooks during any particular day. Finally the blade is thin, light and ground with a sharp but not too steep of an edge to give you good performance and a long lasting edge that won't be overly chippy.

These knives are easy to sharpen with a ceramic rod or water stones and we think they'll be a huge hit with our pro cook customers. At this price point we don't think there is a comparable knife on the market that competes. Made in China for us by the same factory that made the CKTG Safety knife a few years ago but with much better fit and finish. Try it! You'll like it!

    5  Great Starter/Line knife, August 14, 2017

I bought this as an upgrade from my kiwi. As others have mentioned, the spine thickness is a bit on the wide side, but I've encountered no problems getting a thin edge and I don't have to worry about chipping due to the thickness and softer steel.. The fit and finish is a little rough, to be expected on budget knives. I had to sand down the choil as I was getting terrible blisters from a pinch grip. The knife comes fairly sharp out of the box, and I've had no issues ripping through whole chickens, hard cheeses, and rhubarb. Handle has a great feel, one of the best I've seen on a cheap knife and very comfortable for any grip. Overall, I'm very happy with this purchase and would recommend it to anyone looking for a beater knife or a foray into gyutos.

Outstanding knife thus far. The feel, and weight are perfect, and it's giving me the best of both worlds (thin, very sharp, holds its' edge, and durability. It's a bargain at twice the price offered. Buy this knife!
