Along with the yanagiba and usuba, the deba is one of the standard blade shapes in Japanese knives. It is used mainly for processing fish and poultry. It was originally designed to behead and fillet fish. Its thickness, combined with a more obtuse angle on the back of the heel, allow it to cut off the heads of fish without damage. The rest of the blade is then used to ride against the fish bones, separating the fillet.

Nowadays you can find deba as long as 300mm for more general usage. This 180mm blade is a classic length for the original purpose of filleting.

Shikegi Tanaka makes this line of knives from Blue #2 steel, also known as Aogami 2. Itís a high carbon alloy which is very popular in the making of kitchen and other types of knives. He heat treats his blades to about 62 Rockwell, which gives them an ability to take a super sharp edge. Aogami 2 is also a very resilient steel, so maintaining that edge is a fairly simple and efficient process. The hagane is covered with a softer steel layer to aid in corrosion resistance and strength. But please note that you must take care of these single sided blades by wiping clean and drying carefully after every use.

The blade is enhanced with some lovely chiseled Kanji. A simple D-shaped handle with buffalo horn ferrule completes this very attractive and nicely priced knife.

    Great value deba. Pretty sharp out of the box, but with some work on the stones this really sings. Fantastic edge retention. Easily removes fish heads and goes through chicken bones with very minimum effort. I rounded the spine and choil like on the Kaneshige and it makes it a very comfortable knife to use. Thanks Mark for the fantastic recommendation.
