I can tell i am not using the best knife on the planet, but for the price this knife is exelent, out of the box is razor sharp and is so easy to re sharpen, the blade format is very nice, goes very thing towards the edge, i work in a sushi bar and i use it to cut maki, in very busy services i have to re sharpen it every day and a half using a 2 K grit water stone to keep it super sharp all the time, is also very good for general cuting tasks such vegetables, fish and meat,

Very sharp, easy to manipulate, and avery handsome knife. It does a great job on tomatoes and fresh mozzarella, two items that can be downright frustrating with a below-average knife. I was especially impressed by the short amount of time it took to get shipped.

Excellent knife - visually stunning, with a factory keen double-bevel edge. Haven't taken it to the stones yet.
