Moritaka Aogami #2 Nakiri 165mm. These are a new line for us and they are made from blue steel (also called aogami steel). HRC of about 61 and a kurouchi finish. The steel is a little softer than the supreme series and consequently a little easier to sharpen and somewhat more tough. Less chipping but won't hold as steep an edge as the supreme series which uses harder steel.
I really wanted a Takeda,and I felt I was settling for second best,but I just couldn’t get myself to come up with the cash. Now that I have the Moritaka,I wonder why I didn’t just buy one sooner. It’s great! Very light,very sharp,very easy to sharpen. I was also worried about rust,but I have found the Moritaka to be less prone to rust than my Masamoto HC’s. I touched up the edge with my Edge-Pro at 15 degrees,and the thing is very sharp. A few passes on a ceramic rod makes daily use as sharp as any knife I have. So far,I love this knife.

This is my first knife from CKTG. I love it. after talking with Mark and some of the people on the forum. I decided on the Moritaka. Sales and service were excellent. The knife has very good f&f,and was very sharp oob. I have cut a lot trinity with it and could not be happier. I will be buying more from Mark and CKTG!
