The Misono Swedish Steel series features steel from Sandvic Sweeden
which is high carbon steel that takes a steep edge and is easy to re-sharpen.
The large knives also come with an attractive engraving that make these knives unique. On the smaller knives up to 210mm the knives come with a flower engraving and on the larger knives over 210mm the knives come with a very interesting and beautiful dragon engraving.
Please note that these are carbon steel blades and they will oxidize over time. This is normal for this type of steel. They will also rust if left wet so dry them after each use. Some users apply a bit of oil to the knife after drying to keep the knife from rusting.
This is one of my favorite slicers out. It’s fit and finish is solid and the knife is just plain attractive once a patina forms. If you can manage owning carbon steel and don’t want to drop the bucks on a custom suji this is the one I’d buy. I’d buy it again if it ever came up no questions asked
Solid fit and finish. Just the right amount of flexibility for someone who uses a suji for everything. Fillets fish like mad. Steel took a quick patina and holds a nice edge without being too hard to sharpen. Made a saya right away for it and that certainly helps set the patina and prevent rust.

I have owned this knife for over 7 years and it is a great performer and beautiful looking. It takes and keeps a really sharp edge and is really not hard to take care of,for those worried about a carbon steel knife. I highly recommend this knife.
