The Sujihiki is a westernized version of the Japanese Yanagiba. It has the same long slim blade profile that is essential to thinly slicing proteins with a fast and controlled one stroke action. However, unlike its more traditional cousin, the Sujihiki is ground on both sides of the blade. The Misono Sujihiki has an asymmetrical bevel set at 70/30.
This two sided bevel makes it easier to handle and sharpen for more users, while forfeiting only a slight performance advantage to the one sided yanagi.
The lovely 270mm Suji featured here is another in the Swedish Steel line of High Carbon cutlery utilizing Misonoís Sandvic steel alloy. You will love itís ability to take and hold a keen edge. Sharpening is a straightforward matter too. Please remember that this is a reactive steel and it will require you to take extra care in cleaning and drying the blade after every use.
A nicely finished resin impregnated Pakka wood handle is attached to the full tang with three rivets. The metal bolster flows gently into the thin blade at the neutral balance point. A very handsome dragon engraving adorns the blade and adds that final touch of class to this finely finished and beautifully built knife.
