Posted By: JonathanI've used and owned many, many different brands and kinds of kitchen knives, and this is hands down my favorite. For me, it just feels *right*: the weight and balance are excellent, the handle feels right, and the profile isn't too shallow or too tall, and is plenty thin to glide through food. Edge retention so far has been excellent, and when I have needed to sharpen it I I can get the edge to an outstanding level of sharpness with minimal difficulty, despite it being stainless. I own a few other thinner, carbon steel, "laser"-like knives, and while they may be thinner and able to take a slightly keener edge, they're also only suited for certain kinds of applications, just feel more brittle/delicate, and require a little more TLC. Not so with this--if I'm in a rush and can't baby it, I don't need to worry about it. As a result of this combination of superior performance and easy maintenance, this has truly become my all-purpose knife. Highly recommend for someone looking to upgrade from the typical Wusthof/Henckels/Shun/Global/Victorinox chef knives. It's a whole different experience. One note if you do purchase this: to really get the most out of the blade, learn how to use waterstones to sharpen. It's not hard to do, and will make a major difference in performance.
