The Kohetsu 210mm gyuto is made with top-of-the-line Hitachi blue #2 steel with excellent heat treatment and very nice grinds. Coupled with a simple but durable handle, it's available for an incredible price. The 210mm length is the perfect size for processing all but the largest ingredients.

Many of our customers are line cooks and we made this knife as a no frills line knife that should be a great and long lasting cutter. The knife is clad in stainless steel so only the mirror finished carbon steel edge will be reactive. Less maintenance...more productivity!

Kohetsu loosely translates to "be happy" in Japanese and we hope this knife will make you happy for years to come. The knife is made in Japan to our exacting specifications.

This knife is a fantastic deal and a great introduction to Japanese carbon kitchen knives.

    I’ve had this knife for two months and use it every day for almost everything at work. Only sharped on a wet stone once when I got it and hone it before and after use. The knife has held a great edge ever since.

      THE KNIFE I REACH FOR

    So, this knife was one of my firsts. Since then, I have acquired larger gyutos, sujis, Santoku, and nakiris of all caliber. This is still the knife I reach for. The stainless cladding is soft and definitely not scratch resistant. However, it stays sharper longer than anything else I own. The handle is basic and I love it. No frills workhorse worth using in a high volume kitchen. 5 stars, but around an 8.5/10 due to the scratching.

    If you're looking for a knife to show off to your knife snob pals, look somewhere else. If you want a no-frills knife that's got a great shape and a fantastic, easy to sharpen and keep sharp blade, stop reading this and buy it. A great knife at an even greater price!
