The Kohetsu 210mm gyuto is made with top-of-the-line Hitachi blue #2 steel with excellent heat treatment and very nice grinds. Coupled with a simple but durable handle, it comes to you for an incredible price of just $99. The 210mm length is the perfect size for processing all but the largest ingredients.

Many of our customers are line cooks and we made this knife as a no frills line knife that should be a great and long lasting cutter. The knife is clad in stainless steel so only the mirror finished carbon steel edge will be reactive. Less maintenance...more productivity!

Kohetsu loosely translates to "be happy" in Japanese and we hope this knife will make you happy for years to come. The knife is made in Japan to our exacting specifications.

This knife is a fantastic deal and a great introduction to Japanese carbon kitchen knives.

    Great knife and it is a real work horse for me as a home cook. The blade is very stiff and sharp. The handle is comfortable for me even without the metal bolster. It holds the edge very long and every easy to sharpen on my whetstones. It is a great value at such a good price ! You just need to habitually clean the blade after every use otherwise rusty spots can develop along the blade edge. Highly recommended if you prepare to look after it !

    I'll preface this by noting that this is solely my opinion. My dislike of this knife was purely subjective, and as you can see, I'm more or less alone on it. I realize a lot of people loved this knife...that's cool; I didn't.

    For the blade, it's excellent...I think. I didn't actually cut anything with this knife. I picked it up out of the box, and hated it instantly. The handle just felt wrong. For starters, while I'm not up on exactly what qualifies as "Western," this did NOT feel "Western;" it LOOKS Western, but with a very angular, blocky, Japanese feel, which is not to my taste. It's also incredibly heavy on the back end. Hands-down, the most uncomfortable knife I've ever held. Pay close attention to the videos and note the shape, width, and position of the bolster.

    All that said, the blade was incredibly sharp OOTB. For the price, you probably won't find a better blade, but for me, the fit/finish was just awful. I'm not a huge dude, and my hands are pretty average, but just holding this thing with a standard pinch-grip got uncomfortable in about 30 seconds. It went back in the box.

    This knife is probably the best buy for the money on the website. What definitely caught my attention is that it has the blue #2 steel for such a low price. Blue #2 steel will hold an incredible edge. This knife cut through a bell pepper like the vegetable wasn't even there. The knife also has a nice gradual taper from the cutting edge to the spine. If you're looking for great value for your dollar, definitely check this knife out.

    For those that have big hands, this knife has a little larger handle similar in size to a Wusthof Classic. The only thing I might like to see possibly changed is the front of the handle. I wouldn't mind to see it slightly tapered and rounded a little more. But this knife cuts great!

    My mom was looking to upgrade her kitchen knives so I thought the Kohetsu Blue#2 gyuto would be a nice upgrade from her Wustofs. The blade looked really nice on arrival. I recently used it at her house and was able to slice a tomato into 2mm slices from top to bottom with horizontal cuts and almost no help from a second hand to hold the tomato in place. Best thing is that the handle, other than lacking a bolster, is a dead ringer for the Wustof handle, so I was able to convince her to Put it into the Wusthof block rather than sticking it a drawer where it would risk damage.

    Another winner for sure. OOTB sharpness is top notch, simple design without flashy addons. I love the weight. Perfect for my aesthetic. Also, it'll make it less likely to get stolen at work.

    As usual the customer service was excellent. The shipping was not only free but fast. The knife itself is a beautiful piece. I bought this as a gift for my brother and sister in law. After receiving it. I wanted to keep it. Extremely light! Laser Light! The FF is very good. OOTB sharpness is very good. Wish I had order two at this price point. Another great offering from CKTG.

    Was a little uncertain on this knife. Price and quality of steel seemed too go to be true. Fortunately my worry was quite unnecessary. The usual excellent service CKTG provides brought me my blade in no time. OOTB sharpness was outstanding (one of the best OOTB edges I've ever received) so i wasted no time putting it through it's paces. Turned an onion into white rain with minimum pressure and worked through carrots with precision and safety. Love the pantene forming right up against the polished edge. Real pro look. At this price I had not expected a workhorse knife but low and behold it is! Great value,great service and a real pro knife ...I'll be using the heck out of this tool for sure.

    Received my Kohetsu 210mm from CKTG. Sales and service were excellent as always. First impression is excellent. Fit/finish is very good. OTB sharpness is very good. Have done some intial prep work was very pleased with the performance. Would highly recommend this knife. Excellent value for the price!

    Love this knife. The western handle fits my hand well and leaving off the bolster for economic reasons actually makes the blade a better tool. OOB sharpness is scary and the finish on the mirror edge is reminiscent of much higher priced knives. This quickly supplanted my Shun 8 inch chef as my go to prep knife. Excellent knife at an unbelievable price point. highly recommended.
