This Kikuichi Gold Elite Gyuto or Western Style Chef Knife measures 8.25" on the blade. These knives are made with a hard VG-10 stainless core which provides excellent edge retention. The damascus exterior of the blade is hand forged and provides stability, toughness and beauty to the blade. In the final step, the blade is hand hammered for a truly unique blade that will provide years of cutting pleasure.

    My first knife, purchased 2 years ago. I use it every day for nearly everything. Every time I do, I marvel at the craftsmanship, heft, balance, blade, and beauty. This may be a knife for professionals, but I'm certainly not; I just appreciate fine quality in tools. If that's you too, this is your knife.

    This is a huge upgrade from my previous chef's knife. The balance is excellent, the edge is incredible and it feels very solid in the hand. If anything, it is forcing me to improve my handling skills. Excellent product for an excellent price.

    this is without a doubt the best knife on the market for any aspiring chef or hardcore culinary/cutlery fanatic. of all the knives ive owned, used, tested, or seen, this is my absolute favorite, sharpest edge in a sub $1000 knife, and retains it for months without need of honing or sharpening even under heavy use.
