The Shun Classic 8” chef knife is probably responsible for more cooks and chefs “finding” Japanese knives than most other blades. This is a true gateway knife. Closer in style and weight to a Western style chef knife, it is skewed enough toward the lighter, more nimble Japanese gyuto to offer users that first experience of a real Japanese blade. The screaming sharp out of the box edge and thinner grind will win over the most ardent fans of heavier and bulkier Western chef knives.

The Shun Classic 8” chef knife is perfect for everyday cutting, slicing, and chopping. The beautiful blade features the look and benefits of Damascus steel, yet without its rusting problems. The blade profile reduces sticking while its super sharp edge is easy to maintain.

    Shun make great knives. They are the Toyota/Lexus of the knife world. They might be production knives but they benefit from that in my opinion. Fit and finish are unbelievably good. Looks are subjective, but i think they are downright beautiful. The edge, even out of the box, was commendable. But after a few touches on a couple of stones and strops this is a razor. Not a laser! It's a big knife. Chunky. It was my first Japanese knife and I use it almost every day. On the toughest jobs. A really good knife.

    This knife was my introduction to Japanese knives and I'll admit I picked it because it looked pretty. Despite all the negative comments on knife forum from knife snubs, the knife performs well. At this price range, shun has the advantage of having both the aesthetics and performance. But knowing what I know now, at the same price point, I would pick a handmade knife by Takamura which outperform most Japanese knife or spend a little bit more and select a knife that as both the aesthetics and performance (and your choices are endless here).

    Not only is this 8""Shun Chassic chef's knife aesthetically pleasing, it is also a pleasure to work with. It arrived as sharp as any knife I have ever worked with. The handle is comfortable and I don't hit my knuckles on the cutting board although just barely)while chopping. I thought about buying the 10 version. And if I was a Le Cordon Bleu alum perhaps I could effectively use that size. I'm glad I bought the 8"". As the budget for kitchen gear grows I will definitely add more Shun knives to the collection. I believe they are lifetime investments.

    This entire line is as maligned as Bose and Rolex, two brands that spend too much on advertising and not enough on quality. I think that this is bull-puckey as this knife is pretty much perfect. Balance is excellent, edge and edge retention is fantastic, ergonomics are flawless. And it's pretty -- and pretty cheap (by comparison). This is the knife I recommend to all first timers looking for a step up from German steel.

    This knife is a true workhorse in the kitchen and a nice intro to Japanese knives. It's durable and has stayed sharp for a while being used at home on a regular basis. Like most Shuns, it is a bit thick but it's not a problem in most uses. It holds up great when cared for. I've had mine for almost 2 years and it has very little signs of wear and tear.
