This knife is a true workhorse in the kitchen and a nice intro to Japanese knives. Itís durable and has stayed sharp for a while being used at home on a regular basis. Like most Shuns,it is a bit thick but itís not a problem in most uses. It holds up great when cared for. Iíve had mine for almost 2 years and it has very little signs of wear and tear.
This entire line is as maligned as Bose and Rolex,two brands that spend too much on advertising and not enough on quality. I think that this is bull-puckey as this knife is pretty much perfect. Balance is excellent,edge and edge retention is fantastic,ergonomics are flawless. And itís pretty -- and pretty cheap (by comparison). This is the knife I recommend to all "first timers" looking for a step up from German steel.

Not only is this 8"Shun Chassic chef’s knife aesthetically pleasing,it is also a pleasure to work with. It arrived as sharp as any knife I have ever worked with. The handle is comfortable and I don’t hit my knuckles on the cutting board although just barely)while chopping. I thought about buying the 10" version. And if I was a Le Cordon Bleu alum perhaps I could effectively use that size. I’m glad I bought the 8". As the budget for kitchen gear grows I will definitely add more Shun knives to the collection. I believe they are lifetime investments.
I owned and used this knife for about a year and a half. It is a good knife. Light,well balanced and very sharp. It holds an edge quite well and is fantastically easy to take care of. The only time sharpening was a headache was when I hit a peach pit and left a noticeable nick in the edge. Then I noticed how hard this steel is. It was a HUGE upgrade from my henkles pro-s. I would recommend this knife for anybody who wants to try a japanese knife without a huge price tag,or heavy care responsibilities. Im taking off one star,however because I think there are better knives in this price range,that aren’t a "brand"
