This knife is a true workhorse in the kitchen and a nice intro to Japanese knives. It’s durable and has stayed sharp for a while being used at home on a regular basis. Like most Shuns,it is a bit thick but it’s not a problem in most uses. It holds up great when cared for. I’ve had mine for almost 2 years and it has very little signs of wear and tear.

This entire line is as maligned as Bose and Rolex,two brands that spend too much on advertising and not enough on quality. I think that this is bull-puckey as this knife is pretty much perfect. Balance is excellent,edge and edge retention is fantastic,ergonomics are flawless. And it’s pretty -- and pretty cheap (by comparison). This is the knife I recommend to all "first timers" looking for a step up from German steel.

Not only is this 8"Shun Chassic chef’s knife aesthetically pleasing,it is also a pleasure to work with. It arrived as sharp as any knife I have ever worked with. The handle is comfortable and I don’t hit my knuckles on the cutting board although just barely)while chopping. I thought about buying the 10" version. And if I was a Le Cordon Bleu alum perhaps I could effectively use that size. I’m glad I bought the 8". As the budget for kitchen gear grows I will definitely add more Shun knives to the collection. I believe they are lifetime investments.
