Japanese handmade knives often occupy a niche in the space between characterful and rustic, and elegant and precise. This 240mm Gyuto from Mr. Hinouraís Tamashii line of knives is a masterfully crafted example of this tension. The knife wears a durable kurouchi, or blacksmithís finish over a stainless steel cladding layer. The core steel is Hitachiís Shirogami #2 carbon steel hardened to 62 HRC. While the kurouchi finish and stainless cladding greatly ease maintenance, the core steel is reactive and will patina with normal use. The knifeís profile features an extended flat toward the heel ideal for chopping and push cutting, a gentle belly for rock cutting, and a nimble tip for delicate work. The blade has a high performing grind and a moderate amount of weight to contribute to cutting power. While most product lines use very similar blade designs and simply scale them up or down to achieve different sized gyutos, the Tamashii line is unique in that the 210mm gyuto is a very different design from the 240mm. The handle is an octagonal yew handle with buffalo horn ferrule. These are handmade knives so dimensions may vary somewhat from the specifications posted.
