These are very popular knives. Low cost and the high quality steel make these knives a great value. Dojo knives are made by the Hayashi knife company. The blade is tempered to Rc62. The knife is clad with Aogami Super steel surrounded by a stainless steel to provide protection and durability.
Sharpens easily,holds edge well,great carbon steel core,laminated with stainless to minimize susceptibility to corrosion but still require extra care. Size works well for most things. Probably the best value in a super blue steel kitchen knife.

I am a frugal man,but I can’t help but part with my hard earned dollars in order to acquire the knives featured on this site. I’ve heeded the recom- mendations of Mr Richmond and haven’t been disappointed yet. These blades represent great value,IMHO.
