Ease of sharpening: 5+ (the heat treat is insane on this shirogami 1)
Edge retention: 4 (again, insane heat treat, no decrease of sharpness whatsoever after a week of home use and several potatoes and onions after)
Wedging: 4+ (surprisingly no wedging whatsoever despite the choil profile, although it is ultra thin behind the edge)
Food stickiness: 5 (the only things that still stick to the blade are diced potatoes)
Profile: 5+ (seriously, look at that tip)
NB: 8/10, sharpest OOTB of all the knives I bought on CKTG.
