As a boning knife, or knife to perform the tasks I asked of it - it performed exceptionally well!
The B#2 steel took a great edge; in fact so sharp I shaved with it!
While shopping and looking at the product photos I was under the idea that I was going to replace the factory handle; as it was to be chicken "salmonella" machine.
When the knife arrived I was rather impressed with the hand!
It is sealed very well with laquer.. so no need to replace it, or do anything with it!
The fit between the tang and handle are also great, and sealed well. No issues with rusty tang here.
Being my first B#2 I didn't know what to expect.
The edge was OK OOTB, but after a few minutes on the Edge Pro, and a strop or two on the leather... it was shaving, literally! I shaved a large portion of my face with it,a nd was in absolute awe at how insanely sharp this knife gets!
As a protein petty: this thing is a beast!
When I used it to debone chicken breasts it was a magical experience; meaning, the knife is so sharp that I never felt the tip contact the meat. It was as if the tenderloins were magically falling off the bone on their own.
As a petty for veg and other items:
It is a bit thick as the spine for a normal, everyday petty as it wedges in items like potatoes.
It's not a CON, or slam at the knife -- just know ahead of time what you are getting.
Overall I am very pleased with this purchase!
