With a blade height of 33mm, this sabaki is taller than most petties, behaving and feeling more like a mini gyuto. Classically the sabaki is used to remove meat from bones easily and efficiently...but don’t cut through bones, please! Of course, the knife will also do sterling work as a regular petty for those looking for some extra board clearance.

The Blue #1 Steel used by Murata-san is a high carbon steel and as such requires some care. However when coupled to the “black hammer” kurouchi finish, much of that maintenance is mitigated. A lovely octagonal Wa handle completes the package.

High performance and great edge retention are hallmarks of Murata Buho knives and this fun and useful implement is a perfect example of the breed.

*Please note, the tips on these knives are ground off at an angle. This is intentional. See the second photo to see what it looks like.

    I am in the process of collecting a variety of petties in various lengths to compliment my Chopper King Cleavers. I use a 210mm a lot, but it’s too long for detailed work. While this is a boning knife in theory, the size is perfect for some paring and hulling and it’s tall enough for a little board work if you use it towards the edges.

    I admit I was concerned as the spine is so thick, but that is by design. I didn’t buy it for boning.

    I’m becoming quite a fan of blue steel. I’m not thinking I will get much sharpening practice as it has great edge retention and stays razor sharp. Additionally, if it needs a touch up it is small enough to fit perfectly on a 3” wide strop, similar to stropping a EDC blade. Blue steel on denim is a formidable combination in my opinion.
