The Sabaki is a slightly taller petty, almost a mini gyuto. The Sabaki knife is used primarily for removing the meat from bones (but not cutting through them) easily and quickly. Takeo Murata is a blacksmith from Kochi Japan. His knives have a good reputation for quality and he uses top shelf aogami blue paper steel for his knives (blue #1 steel) with HRC of 61-63. These knives have a nice kurouchi finish with really nice octagonal handles. These knives are sold under the brand name Buho.
