The nakiri is a knife that features in many professionals’ knife rolls and home kitchens. This versatile blade is primarily used for chopping vegetables in a straight down cut minimizing push and pull motions. It excels at cutting hard root vegetables but is useful in an all purpose mode. The thin blade and fine grind of this knife preclude it from use on tougher materials like bone however.

The Murata Buho nakiri is a well balanced and nicely finished example of its type. It features a blade forged from Blue #1 carbon steel which is further refined with a great looking and practical black hammer kurouchi finish. Rockwell Hardness is 61-63, a sweet spot for this steel. Its good looks are enhanced by the octagonal nicely balanced ho wood wa handle.

    I've played around with a lot of knives over the past few years, and actually came back to this maker after a long trip through PM steels, honyaki and other exotic trends. The steel takes a fantastic edge, and does so easily. It's a much friendlier users knife than steels at harder HRC, but still performs very well. I traded my first one to a friend, then came back and bought another one two years later. Because it's not a huge knife, it doesn't wedge, and because it has harder shoulders, the food release isn't bad at all. The steel is nice to use and sharpen. Just all around good, and underrated.

    I've been using this knife for prep and on the line. This is a solid performer - sharpens easily and holds a good edge. I am even able to slice right through crusty stirato buns. The reason I give it 4 stars instead of 5 is the handle can get a bit slippery. Also, the fit and finish of where the blade goes into the handle is not great either. The blade itself is wonderful though, and a good value even with the mediocre handle.

    Great knife for the price! I have had this knife almost a year now, having dealt with it on a daily basis I can tell you it surpassed my expectations. This knife sharpens easily and holds it's edge for a long time! Personally I put a bit of a wider bevel on the knife but that is down to personal preference. The only bad point is the handle can be a little bit slippy if your hands are wet. Overall great for the price and would reccomend to anyone.

      My First Japanese Kitchen Knife

    My initial impression is that it looks like some love went into the making of this knife. Out of the box, it passed the paper cutting test pretty well. I stropped it on the white pages of a phone book and now it's really running clean through the paper and the edge is nice and shiny. I really like this handle, which is why I sprung for it over the nice entry-line series that CKTG has. The octagonal shape allows one to really get a sense of the angle of approach. My only criticism has to do with the finish. It's very smooth as mentioned, and more than this, a small section at the end has already started to flake off. Better to leave the wood raw and allow us to apply oil in my opinion. Balance seems good as to the pinch point as described for this style of knife, but I would prefer a denser wood with more weight in the handle. Again, this is my first Japanese knife, so maybe my view as to the handle density will change with continued use. Looking forward to picking up the 120mm Buho when its back in stock.

    This is a great knife for the price. It's thin, sharp out of the box, and quite corrosion resistant. Where it looses a lot of points is the handle. Is it even wood? It says so in the description but feels like plastic. That being said, it does feel comfortable in my hand. If you don't care about that, it's great for the money.

    This is not one of my favorite knives. The handle feels cheap and the light weight of the knife makes me feel like i'm going to break it every use. The edge gets razor sharp with a good sharping though. Out of the box this was not sharp enough for me so after 10 min on the stone its a lot better.

    All I can say is wow. The knife cam screaming sharp ootb with great fit and finish especially for the price. Can't wait to put some hours on it. AMAZING knife. Can't beat it for the price.

    Absolutely fantastic knife -- I'd been looking for a reasonably priced hand-made nakiri for some time, and this fit the bill perfectly. The octagonal handle is ideal for me, and the OOTB edge is sharp enough to push-cut paper. Great value for the money, and best of all, there's no cheap plastic ferrule!
