I've played around with a lot of knives over the past few years, and actually came back to this maker after a long trip through PM steels, honyaki and other exotic trends. The steel takes a fantastic edge, and does so easily. It's a much friendlier users knife than steels at harder HRC, but still performs very well. I traded my first one to a friend, then came back and bought another one two years later. Because it's not a huge knife, it doesn't wedge, and because it has harder shoulders, the food release isn't bad at all. The steel is nice to use and sharpen. Just all around good, and underrated.Was this rating helpful to you?
