Kurosaki’s work for Masakage in the company’s Shimo line is exceptional. The handcrafted blade sports a core of White #2 steel treated supremely well. The edge is capable of acute angles and very high levels of refinement without becoming chippy or losing integrity. The core W#2 wears an iron Damascus cladding that is fairly reactive. Both the core and cladding should be kept dry and acidic ingredients should be wiped off often during early use. Once a patina forms, this will become less necessary.

Kurosaki is one of our favorite young knife makers, producing phenomenal blades from his workshop in Takefu Village. The Shimo line sports Magnolia wood handles with Pakka wood ferrules. Fit and finish is good and the edge profile on these knives is fairly flat. Kurosaki excels in creating knives that are truly athletic in character and perform equally as well cutting hard, dense produce as they do gliding through onions. Much of this is due to how thin his knives get behind the edge and the wonderful convex grind on the blade which becomes nearly imperceptible towards the tip.

In 270mm format, the weight of the knife is still quite accessible and the blade remains incredibly nimble. The additional cutting power makes this a favorite format with pro cooks.

    Couldn't be happier with this purchase. For me, the profile is really the star here with a very generous flat spot, but still rocks just fine. Grind is excellent. Mine wasn't super sharp out of the box, but this isn't a complaint, just an observation.Too soon to know about edge holding, but even for a novice like me, getting a great edge took no time at all. The cladding was very reactive, but immediately formed a beautiful blue patina and has calmed down to a state that's easy to manage, even in a commercial setting.

    It's hard to describe the beauty of this knife. It has the perfect weight, height, and just utter perfection in the blade. I want 100% sure when I bought this if I'd like it. But from jut holding it for a moment I knew how great this knife would be. fone ofthe best purchases I have ever made. Excellent price too.
