If you are familiar with Japanese knives, chances are that you have heard of Masamoto. The knives in their VG line are made for the western market and feature Masamoto's high quality "Hyper Molybdenum Vanadium" stain resistant steel. It is a proprietary steel which Masamoto exclusively use for this line of knives. It contains 1% carbon.
The knives come with Duracon handles, which are a big improvement over the more common wooden scales that other manufacturers use that typically shrink. They are anti-bacterial and afford the knife a wonderful light and balanced feel.
This 120mm petty is a great size and weight for most small to medium tasks around the kitchen. It has a nice thin blade profile with a 70/30 edge bevel. These knives have excellent edge retention and combine the sharpness of carbon steel with excellent rust resistance.
