If you are familiar with Japanese knives, chances are that you have heard of Masamoto. The knives in their VG line are made for the western market and feature Masamoto's high quality "Hyper Molybdenum Vanadium" stain resistant steel. It is a proprietary steel which Masamoto exclusively use for this line of knives. It contains 1% carbon.
The knives come with Duracon handles, which are a big improvement over the more common wooden scales that other manufacturers use that typically shrink. They are anti-bacterial and afford the knife a wonderful light and balanced feel.
This 120mm petty is a great size and weight for most small to medium tasks around the kitchen. It has a nice thin blade profile with a 70/30 edge bevel. These knives have excellent edge retention and combine the sharpness of carbon steel with excellent rust resistance.
Impeccable fit and finish are a hallmark of the Masamoto brand and this knife is a perfect example of their fine craftsmanship and attention to detail.
Masahiro Hirano, a direct descendant of Minosuke Matsuzawa and current president of Masamoto-Sohonten says: ďI believe that our tradition and the passion of our craftsmen live in each knife we produce, and through the hands of the people who use them, it will reach to the hearts of the people who enjoy the dishes they makeĒ. The tradition continues........

Fantastic knife purchased as a present to myself to go along with a chef's knife from the same manufacturer. Great for smaller jobs, fantastically sharp, a true delight to use.
CKTG is at heart a small business so the service is personal. They are one of the rare companies that actually dispatch the order the same day as receiving it and provide tracking information. It is great to deal with an individual by name and itís evident that they take pride and love in what they do.
Had a problem with one of the products and they went out of their way to resolve. I would highly recommend dealing with this company. Itís nice to find a company who cares and they will get me as a return customer.
Mark is great at answering questions for knife nuts of all levels. His service is second to none. Really appreciate the time he puts into every email as well as the free forum he hosts.
