Minosuke Matsuzawa, the founder of the Masamoto Sohonten Company, started making knives in 1845. It was his dream that his family would come to be "remembered as knife craftsmen throughout the generations." Now, six generations later, Matsuzawa's vision has been realized and professionally crafted Masamoto knives have become known as the best knifes in Japan and are widely regarded as some of the finest knives made for use by professional chefs worldwide.

Masamoto's Western-style line are made of a proprietary alloy called Hyper Molybdenum Vanadium. It is a high-carbon stainless steel with added cobalt, molybdenum, and vanadium. These knives are extremely hard, sharp, and stain-resistant. The blades are hardened to an HRC of 58-59 and sharpened to a 70/30 bevel.

The mid-sized gyuto is a real jack-of-all-trades in the kitchen and this particular version of the ubiquitous knife possesses a nice balance and fast cutting action. This is a great rendition of East meets West. The yo handle is constructed from a composite material know as Duracon, which possesses great stability and is anti-bacterial. The Japanese style blade is light and more nimble than its European and American counterparts. A really nice, durable, and easy to use knife for all kinds of uses and users.

    I own a bunch of chef knives/gyutos. Some cost a lot more than the Masamoto VG. And while this isn't the thinnest laser I own, nor is it the lightest most nimble knife I own, nor does it have the sharpest edge or the best retention. However, no single knife in my kitchen combines all those qualities either. What the Masamoto VG represents for me is quite possibly the best all around go to utility knife I've ever owned. The fit and finish and out of the box sharpness blows most any other western style gyuto away. The steel is well hardened which is what you expect on a Japanese knife and the blade is much thinner than you will ever find on a German knife but not a really thin knife in the Japanese sense. Still, its profile is just perfect for all around prep work in the kitchen. The handle is slightly bigger than you would find on say a Wustoff classic but the edges are more rounded. Perfectly balance at the bolster. CKTG shipping was lightning fast as always. If you can only have one chef knife in your kitchen this is the one to buy. The best all around western style gyuto in my kitchen by far..

    Razor sharp straight out of the box. Feels great in the hand. Just below $200 what makes this a great deal. Don't know if it holds the edge a lot but considering what I've been hearing and reading about it, I won't know for a while.
    CKTG's service: lots of positives, mainly price and how long it takes to be delivered (I got this and a Hiromoto Gyuto 240mm 2 days later... in London). One downside: my Masamoto came with scratches on its collar and rivets.

    i love this nice they really do make great knives and i have 2 pettys and 2 chef knife by masamoto i usually don't buy same brand on knife but i really like this brand .

    The Japanese, of japanese knives. Perfect size, great balance and ergonomics, this is everything you need in a professional knife. Pretty much on par with the greatest, if not THE greatest gyuto you can ever own. Fast shipping( only took two days). Purchased the universal saya to go with it, fits perfectly! CKTG has most certainly the best customer service, responded well to all my questions with quick reply. I most certainly look forward to my next purchase at this site.

    Masamoto chef knife has a great balance and good sharp edge. The only down side is the handle which I think is poorly made and finished. I can see grind marks on the sides and bottom of the handle.
