Posted By: Keith The blade is nice. Over all good geometry. The edge was taken to a high polish unusual for a knife at this price. With use the blue steel core will patina and has a pleasing lamination line. It sharpens up easy and has good edge retention.
Only reason gave it 4 stars is the handle is not as good as the blade. However the micarta material does hold up well in production kitchens. It can also be sanded. I recessed and smoothed the leading edges for a more comfortable pinch grip. There were a few lite horizontal scratches in one of the rivets. Took some wood off the sides & rounded the edges. Now all the pins have a nice polish and the handle little slimmer. It was an easy fix.
I cannot think of any knives at this price that have a stainless clad quality core steel and thin behind the edge.
