We need to reduce inventory on these. Save 25% for a limited time. If you are looking to enter the world of carbon steel Japanese knives, we highly recommend the Kohetsu Blue #2 line of knives as a great place to start.

This 240mm gyuto is a great cutter at a fantastic price. The larger than normal handle is balanced by the finely ground blade. Itís an attractive knife full of character while being easy to maintain.

While carbon steels require some care in that they can discolor or even corrode, the addition of a stainless cladding reduces this to just the exposed edge. The extra care needed on this edge is offset by the much easier sharpening characteristics of the metal. Even a novice sharpener will feel comfortable bringing this edge up to its full potential.

The knife comes with a very good symmetrical grind making it great for left- and right-handed users.

You will be hard pressed to find a better value in a knife than this lovely 240mm Kohetsu gyuto.

    4  some handle sanding takes this knife from functional to fun, October 23, 2015

    This is a great knife at this price, and it was much easier than expected to make it an excellent knife, with a little sanding of the handle to make it round. Would be awesome if Kohetsu could modify the handle to a more round shape in production. Even with the squarish handle, it outperforms its price range. Moving from stainless over to carbon, and wish I had just gone with carbon from the outset. Loving it.

    The blade is nice. Over all good geometry. The edge was taken to a high polish unusual for a knife at this price. With use the blue steel core will patina and has a pleasing lamination line. It sharpens up easy and has good edge retention.

    Only reason gave it 4 stars is the handle is not as good as the blade. However the micarta material does hold up well in production kitchens. It can also be sanded. I recessed and smoothed the leading edges for a more comfortable pinch grip. There were a few lite horizontal scratches in one of the rivets. Took some wood off the sides & rounded the edges. Now all the pins have a nice polish and the handle little slimmer. It was an easy fix.

    I cannot think of any knives at this price that have a stainless clad quality core steel and thin behind the edge.

    I use this knife daily in a professional setting and can't recommend it enough for the price. Takes a great edge easily, keeps it for days, and feels great in the hand. Even the exec in our kitchen commented on what a good cutter it is. I don't find the exposed carbon to need any sort of special treatment or babying. The only reason I give it 4 instead of 5 is that the original edge was quite chippy but that was helped with the first sharpening. Other than that, I can't imagine anyone not liking this knife.

    This knife hits the sweet spot for price and performance. The handle seemed bulky for an almost laser until using it...i find the handle to be quite comfortable in use. Slight blemish between core steel and stainless near the tip, but doesn't effect performance. A must have at this price.
