Posted By: AmandaI use this knife daily in a professional setting and can't recommend it enough for the price. Takes a great edge easily, keeps it for days, and feels great in the hand. Even the exec in our kitchen commented on what a good cutter it is. I don't find the exposed carbon to need any sort of special treatment or babying. The only reason I give it 4 instead of 5 is that the original edge was quite chippy but that was helped with the first sharpening. Other than that, I can't imagine anyone not liking this knife.
