This Kikuichi Gold Series Gyuto measures 240mm or about 9.5" on the blade and features Swedish steel. The knife is designed for professionals that want top performance. This steel used is VG-10 which is considered to be the most ideal material for kitchen knives. The alloy consists of Chromium 15%, Cobalt 1.5% and Molybdenum 1.0% for the optimum consistency. The result is a knife that takes an incredibly steep edge and retains that edge for much longer than most other knives on the market today. The knives have a stainless steel exterior around the VG-10 core to keep the knife from oxidizing.
I got this knife for xmas and it came extremely sharp out of the box. I could slice the top of a tomato horizontally without even holding the tomato. f&f was great,but not the best,but since it is a handcrafted knife.. I guess one can appreciate the flaws. I’ve used it for 2 days at work and I prep 2 hours each time and the edge has been great.
If you’re looking for a serious knife with some glam,I highly recommend this knife.
