We are so pleased with this line of stainless steel knives that we heartily recommend them to anyone looking to dip their toes into the Japanese knife waters. The FKM series is also a great place to shop when looking for a gift for a friend or loved one who likes to cook. These are very user friendly knives. Constructed from a tough and easy to maintain stainless steel, these knives take and hold an edge that is sharp out of the box and relatively easy to resharpen even for a novice. The finely crafted blade is thin and of average weight. This is nicely balanced out by a black Pakka wood handle and stainless steel bolster. Sujihiki knives are a westernized version of the classic Yanagiba. Used to slice all kinds of meat, poultry and fish. This long, slim and flat blade glides through these proteins with ease and efficiency. Normally only requiring a single stroke to complete the cut. The thin blade reduces friction and thus minimizes food sticking....even with raw ingredients like carpaccio or sushi. In fact this is a great sushi knife for those intimidated by one sided blades. Even if you donít find a daily need for this type of knife, the price and quality of the FKM Suji makes it an easy on your pocket purchase.

    I chose this knife because it's the light and thin with a small handle, and it's perfect for those reasons. Pretty sharp, slides through food with very little resistance. It's probably the thinnest blade I've ever used. It's got some flex to it which is nice for other tasks. Awesome value! Great customer service
