All I can say is Wow! I took a chance on this knife because the handle is so different. But I am extremely glad I did. I have owned 3 other boning knives and I have really never felt that they were very good. This knife puts them all to shame. It has a nice long blade that is not "too" long and it is very flexible. I boned out a 23 pound ham very,very easily and also used the knife to skin fish fillet with ease. The handle is remarkable. It feels so natural in the hand and its weight gives you very precise control. The knife is stainless steel and cleans easily. It has earned its home in my knife block!
