This Blazen Gyuto (chef knife) measures 270mm or about 11" on the blade. Blazen knives are made in Fukui Japan which is renowned for producing high quality knives and swords. Takamura prides themselves on making knives with superior edge retention which for generations has made this company famous for manufacturing the ultra hard, thin edged knives that will maintain a spectacular edge over years of use. This Blazen Gyuto or Western Chef Knife measures 10.5" on the blade. Comes with a free Saya or wooden sheath.

Superior knife,I recommend this to anyone looking for an amazing knife,this knife stats razor sharp,and I have put this knife through it’s paces,I have never had a knife stay as sharp as this one. It’s weight is perfect for it’s size,the balance is spot on the handle is perfect size my hand never gets tired using this knife.

I have had my Blazen 270 for about 6 months. The knife is great. it came very sharp out of the box and the fit and finish is excellent. The knife is light for it’s size and reasonably thin. After using it with the factory edge for a while I sharpened it to 10 degrees per side on my Edge Pro and finished it with a loaded strop. Now it cuts like a laser.



If you are looking for a western handled 270 Gyuto I would highly recommend it.

I have been using this knife for about 2 years now and it is one of my favorite knives. It takes and holds a super sharp edge. Also it has great geometry. The distal taper helps out a lot. What i like most about this knife is that it doesn’t have to be babied. It is solid enough that it can take real abuse in a professional kitchen environment.

The initial edge was brittle,but after you put a new edge on the knife,it is amazing. With constant everyday use at work,the metal stays super sharp without having to be babied. Thanks Mark for great service and product.
