AS steel is part of the Hitachi Blue Paper family of high carbon steels. It was specifically developed for tools and knives. Aogami Super steel has the highest wear resistance and lowest toughness of the three Blue Paper steels. While edge holding is truly outstanding it is also easy to sharpen. AS contains the highest amount of carbon and chromium of the three alloys, which not only increases its hardness, but also gives it a slight advantage in terms of corrosion resistance. But do remember it is still a carbon steel and as such will require care with drying and general maintenance.
Michikuni Tokaji is a young blacksmith working with the Zakuri collective from the Tosa region of Japan. He makes knives for both the Karaku and Zakuri brands. This lovely sujihiki is intended for slicing boneless protein. The short height and long edge of the blade creates less friction when slicing and the blade draws through fish and meat in one stroke. This attribute translates into less damage to the structure and appearance of the produce.
The Zakuri AS Sujihiki 270mm is a fine knife, combining great grinds, a top shelf steel, and great looks and performance. Now combine these characteristics at a price point that will be attractive to chefs and cooks of all stripes and we think you have a real winner.

Itís a good knife for the price that I paid. It is very hard to sharpen also it doesnít have a great edge retention as I thought.
